New chef partnership with Mike Keen
Norfolk Pheasant delighted to announce new chef partnership with Mike Keen.
Mike is an international chef having cooked in many interesting & challenging environments in most sectors of hospitality.
Currently he's working with the European Space Agency on closed loop food systems for use in space as well as writing a book on fermentation across the North Atlantic which is taking him to the Faroes, Iceland & Greenland.
Once back from his travels he will be sharing his experiences and tips and techniques on fermentation & other traditional preservation techniques such as curing & hot and cold smoking. Mike is an advocate of seat-of-your-pants cookery, adapting techniques & equipment to suit the environment - a skill learnt the hard way!
